Food: napa cabbage + egg stir fry
I keep getting requests for more and more vegetarian recipes....so here is one which is comprised of only a few ingredients and hardly takes time to make. Cabbage is a versatile ingredient and can be cooked in a lot of different ways. I personally love a stir fried cabbage dish, but this particular recipe includes egg which turns the cabbage even more delicious to devour. You can try this recipe on anybody who keeps away from vegetables and they are bound to love it. It goes very well with roti/bread, rice, or just by itself.
Ingredients are,1 napa cabbage :: 1 jalapeno or 2/3 green chilis :: 1 medium onion thinly sliced
1 egg :: canola oil :: salt+pinch of sugar
Wash the napa cabbage and chop it up. Heat a pan on the stove at medium heat. Pour about 3 tbs of oil into the hot pan. Throw in the entire chopped up cabbage into the hot oil. Sprinkle some salt and cover the pan. This will sweat the vegetable and cook it in it's own steam. Stir the cabbage once in awhile but keep it covered and let it keep cooking. Once the cabbage is soft (about 10 to 15 minutes) add the thinly sliced onion along with the chopped up chillies. At this time there is no need to cover the pan. Stir often so that the onion starts to get soft. Beat the egg in a bowl and pour it into the cabbage at this time. Now keep stirring and let all the excess water start to dry out from the cabbage. This is the stir-fry part. Sprinkle a pinch of sugar to bring out the sweetness of the cabbage. Taste and add salt accordingly. Bon appetit!
