Food: quick bake salmon + veg&couscous
Salmon is my absolute favorite Western fish. And most salmon recipes are so speedy that I love it even more everyday. On top of that it is very very healthy for you. While I am baking this recipe in the oven, I use that baking time to make a quick saute of the vegetables with the couscous. This way vegetables are incorporated in the meal and we try to use this trick almost everyday no matter what is for dinner.
Ingredients are few,
2 medium salmon steaks :: 1/3 red onion chopped :: 4/5 garlic chopped
1/4 cup butter in room temp :: 1/2 tsp dijon mustard :: dried dill flakes
sea salt :: freshly cracked pepper :: lemon
Heat oven to 450. Dry the salmon steaks dry with a paper towel. Then lay it skin side down [even if skin is off, lay down the side where the skin used to be]. Sprinkle salt and pepper over the steaks. Now take room temperature butter, the chopped up onions and garlic, the dijon mustard and mix it well with a fork. Layer the mixture onto the top side of the salmon. Lay it on evenly and all over the salmon. Then sprinkle the dried dill and place sliced lemon pieces on top of everything else. Bake for 10 - 15 minutes depending on how you take your salmon.
For the couscous, I heated some water and filled a bowl with the dry uncooked couscous. Then I poured the hot water over the couscous with the water just hanging a little over the layer of the couscous. Then I covered it and let the couscous cook. This takes about 15 mins. Then I sauteed the vegetables [any vegetables] with some olive oil and garlic. Once the vegetables are a bit tender I added the couscous. I mixed everything well and then bon appetit with a side of the yumm salmon steak!
