Food: beef spring rolls [iftaar munchies]
I can assure you that folding spring rolls is much quicker than folding samosas. Maybe because the spring roll uses a large square sheet and therefore is easy to handle. This recipe has beef in it but you can totally use another protein or skip it all together and make it vegetarian. It can also be baked or fried up to your preference. And make a bunch at one time so that you can store it in the freezer for later.
Ingredients,
1/2 lb lean ground beef :: 1 packet shredded vegetables :: 1 onion sliced :: 1 tsp garlic grated
1 tsp ginger grated :: 1 tsp red chili powder :: 2 tsp soy sauce :: 2 tbsp sriracha hot sauce
2 tbsp ketchup :: oil :: salt+tasting salt :: green chili chopped
spring roll sheets :: 1 egg for egg wash
The green chili is optional. If you like spicy then add it, otherwise don't.
Heat oil in a pan and add the oil. Toss in the onions once the oil is hot. When the onions are translucent, add the ginger and garlic. Immediately after, add the ground beef. Toss everything together until the meat is browned. Then add the shredded vegetables. You will find this at the grocery stores in the salad section. Stir often and keep adding the rest of the ingredients one at a time. Taste and adjust your seasoning. At the very end add the chopped green chili. Let this filling cool before folding them in.
Beat one egg to make the egg wash. Take a pastry brush and brush the egg wash all around the edges of the sheet.
Take a scoop of the filling and place it along the edge of the side that is nearest to you.
Fold adjacent sides over the filling.
Take the nearest edge and start folding. You will have to adjust the filling with your fingers while you are folding since it will want to come out.
At the very end of the other edge add some more egg wash and then finish the roll. Now this is ready to be baked, fried, or stored in the freezer. If you are freezing it then lay one layer of rolls on a plate and keep it in the freezer for 10/15 mins. Then take the plate out and the take the slightly hardened spring rolls off the plate and into a ziplock bag or container and finally leave it in the freezer for later use. Bon appétit!
