All you need is,
1 box large pasta shells :: 1 lb lean ground beef :: 1/2 an onion sliced thin :: oil :: salt
1/2 tsp grated or paste garlic :: 1/2 tsp grated or paste ginger :: 1 tsp red chili powder
1/2 tsp cumin powder :: 1 can diced tomatoes :: 1 can leaf spinach
1 small box of mushrooms sliced :: 2 tbsp ricotta cheese
cheddar or any other cheese for sprinkling
1 small box of mushrooms sliced :: 2 tbsp ricotta cheese
cheddar or any other cheese for sprinkling
For the pasta shells, you need to boil and cook them first. Then submerge them in ice water. After that it will be ready to stuff. The reason behind doing this is so that the shells don't stick to each other when you are baking them.
Heat oil in a pan and saute the onions.
Saute the garlic and the ginger with the onions.
Next, cook the ground beef. Add salt at this time.
Then pour the canned tomatoes into the pan and mix with everything.
Now add the red chili powder and the cumin.
Throw in the mushrooms and cover and cook.
Once the mushrooms are softened add the spinach. Mix it in well with everything.
Lastly, mix in the ricotta cheese for creaminess and check for taste.
Take each individual shell and stuff it with the meat sauce. Then sprinkle some cheese on top.
Arrange in a baking dish and bake for 25 mins at 350 C. The cheese will melt and the edges of the pasta will crisp up a little. Happy Thanksgiving!
