Food: veggie/pea/lentil soup
For this healthy hearty soup you will be needing:
2 cups of lentils (I mixed two different kinds) :: 1 can black eyed peas :: 1 cup frozen corn
1 cup frozen green peas and diced carrots :: 1 can vegetable broth or just plain water
2 hard boiled eggs :: 1 cup diced up cheese :: 1/2 an onion sliced :: 4 cloves of garlic chopped
2 tomatoes diced :: 1 tsp red chili powder :: salt and pepper :: olive oil :: lime leaves
Heat a heavy bottomed pan and pour olive oil. Once the oil heats up, thrown in the onions.
When the onions are translucent, throw in the garlic.
At this time toss in the lentils and the red chili powder and stir well. Also add in the salt and pepper.
Now add the frozen vegetables and stir for a few minutes.
Now add the black eyes peas and stir well.
Mix in the diced tomatoes.
Once everything is mixed in well, pour the vegetable stock or water. The stock will add more flavor than the water. When the water starts boiling, cover the pot and set the temperature to medium low. Everything will be cooking slowly at this time. I kept mine for about an hour. But you can set your own consistency. Add the lime leaves for that extra smell. And garnish with diced eggs and cheese. Enjoy!
