Food: larb gai
This is a Thai chicken salad recipe - not only tasty but very healthy as a dinner item.
This is what you will need:
1 lb ground chicken :: 1 cup shredded carrots :: 1 cup shredded cucumbers
1 cup shredded lettuce :: 1 tsp grated garlic :: 1 tsp grated ginger
1 lemongrass stack thinly sliced :: 1 shallot sliced :: 1 bunch scallions chopped
1 bunch cilantro chopped :: 1 tsp red chili powder :: salt :: mint leaves chopped
1 tbsp rice powder :: 2 tbsp fish sauce :: 1 lime juiced :: pinch of sugar

First you need to cook the ground chicken in a little bit of oil and salt in a fry pan.
Now one by one all the ingredients will be added. Here is the grated garlic.
Then I added the lemongrass.
And the shallots.
Here is the scallions.
The cilantro and the mint chopped up together.
The chili powder and the ginger.
Then the rice powder, salt, sugar, fish sauce and lime juice.
Don't forget to add the vegetables.
Mix very very well with your hands before serving.
